Homemade Protein Pumpkin Granola

  • 1 Apple De-cored; chopped into small cubes
  • 1 1/2 cups Rolled Oats
  • 1/2 cup Pumpkin Seeds
  • 1/4 cup cup Flax Seeds
  • 1 tbsp Chia Seeds
  • 1 tbsp Cinnamon
  • A pinch of Salt
  • 1/2 cup Raw Almonds Roughly chopped
  • 2 tbsp Sunflower Seed Butter or any seed or nut butter
  • 1/3 cup Honey
  • 2 tbsp Pumpkin Protein Powder or any Protein Powder you prefer
  1. Pre-heat oven to 325°F (160°C).
  2. Prep a baking sheet with parchment paper or a silicone baking mat. De-core and chop your apple into small, bite-sized pieces. Spread evenly onto the baking sheet and pop it in the oven for approximately 15min or until you're done prepping the dry ingredients.
  3. Combine all dry ingredients together in one large bowl. Mix together thoroughly then add the apple pieces and mix again *(It's important to add the apple pieces after the protein powder has been combined otherwise the powder sticks to the apple without mixing in with the other ingredients)

  4. Add the honey, and seed butter. Mix it thoroughly. It should all clump together without being too sticky or too dry.

  5. Spread the mixture evenly on the lined baking sheet, and bake for about 20min or until it's golden brown with slightly toasted edges.
  6. Let it cool and once it's room temperature, break it apart and store in an air-tight container.
