
Granola is one of those breakfasts that take no time to throw together, they’re quite healthy depending on the types you make or buy and they’re super tasty and fresh for the hot summer months.
With my husband working in aviation where he usually has very early mornings he needs a breakfast that will both fill him up and be very quick to put together. Usually, we buy granola from the stores or bulk food stores, but I wanted to try my hand at making it myself where I had more control with what goes into the mix. Adding a booster of protein helps to keep my hunger curbed for longer and can help sustain me through a long work morning.
The blueprint of making granola is pretty simple
Once you have that down, you can have fun making blends that you really enjoy. This pumpkin protein blend is my favourite so far.
The Recipe

INGREDIENTS:
- 1 1/2 cups Rolled Oats
- 1/2 cup Pumpkin Seeds
- 1/4 cup Flax Seeds
- 1 tbsp Chia Seeds
- 1/2 cup Raw Almonds (roughly chopped)
- 1 tbsp Cinnamon
- A pinch of Salt
- 1 Apple (De-cored; chopped into small cubes) OR 1 cup dried apple pieces
- 2 tbsp Sunflower Seed Butter (or any seed or nut butter)
- 1/3 cup Honey
- 2 heaped tbsp Pumpkin Protein Powder (or any Protein Powder you prefer)

METHOD:
- Pre-heat oven to 325°F (160°C).
- Prep a baking sheet with parchment paper or a silicone baking mat. De-core and chop your apple into small, bite-sized pieces. Spread evenly onto the baking sheet and pop it in the oven for approximately 15min or until you’re done prepping the dry ingredients.
- Combine all dry ingredients together in one large bowl. Mix together thoroughly then add the apple pieces and mix again*It’s important to add the apple pieces after the protein powder has been combined otherwise the powder sticks to the apple without mixing in with the other ingredients)
- Add the honey, and seed butter. Mix it thoroughly. It should all clump together without being too sticky or too dry.
- Spread the mixture evenly on the lined baking sheet, and bake for about 20min or until it’s golden brown with slightly toasted edges.
- Let it cool and once it’s room temperature, break it apart and store it in an air-tight container.
